Mango Madness

I first heard about this on Disney Channel's Pass the Plate.

What you need:
ripe mangoes
salt
fresh cut lime
chili powder


Peel and cut the mango into chunks. Squeeze the lime juice over the mango then lightly sprinkle with salt and chili powder (I like to add a little extra chili powder) and enjoy this South American treat.

Cake?

Does anyone have a homemade cake recipe? and frosting?

Thanks Mom, the cake turned out great even though I used all purpose flour and light brown sugar (because of this I lost some fluffiness but it tasted great!!!) -and I used soy milk instead of cream in the frosting (made no difference)

Two Egg Cake by Angie Moore

1 3/4 cup and 1 Tbsp cake flour
1 1/2 tsp baking powder
1/4 to 1/2 tsp salt
1/2 cup soft butter
1 cup plus 2 Tbsp sugar
2 eggs, beaten
1 tsp vanilla
3/4 cup milk

preheat oven at 350

Mix flour, baking soda and salt.

Cream butter until smooth, slowly blend in sugar, cream until fluffy. Then add beaten eggs and beat until light and fluffy. Add vanilla and mix well.

Slowly add flour mixture and milk in portions and beat well between additions.

Butter and flour two 8 inch cake pans or butter side and line the bottom with wax paper. Pour in batter. Bake for 25-30 mins.cake will begin to pull away from the sides of the pan.

Cool, take out of pan and decorate. serve 8-10

Strawberry Frosting

1/4 cup soft butter
3 to 3 1/2 cup of powdered sugar, packed
pinch of salt
4 Tbsp of stained strawberry juice
2 Tbsp of cream
fresh strawberries

cream butter until smooth, slowly add 3 cups sugar and salt, add strawberry juice and cream from time to time to make smooth, add more sugar to thicken.

Healthy Quick Lunch


I love Smart Veggie Dogs! They are full of soy protein, and this brand has nothing artificial and no nitrites. Just get some...
  • Nature's Own hot dog buns
  • organic ketchup
  • mustard
  • chopped onions and tomatoes
  • and a piece of fruit

...and you are in business. My kids love them and I feel better about giving them veggie dogs over hot dogs because normal hot dogs are a chocking hazard (the meat expands).

Angie's Pancake Tip

Left over Pancake batter? Do not throw it out! Take your left over batter and make small silver dollar pancakes.
Allow pancakes to cool and put into small plastic storage contaniers. Make sure you push out excessive air. You can keep your pancakes up to one month in the freezer. They are ideal for late morning starts. You can quickly warm them in the microwave for 10-15 seconds. You can also place leftover breakfast meats in the same container.

Also consider placing them in your bag when you must take the kids out with you to see a friend and you really don't have time to stop to get something to eat. You will find that this is a life saver and it saves money.

Going Bananas

Before your bananas go bad, peel and freeze them. You can use them later in a fresh fruit smoothie. I like to blend frozen bananas, strawberries and fresh mango with a little Dannon All Natural Lowfat Vanilla Yogurt.
